 I love to dress up a simple dinner with this quick and easy apple, goat cheese, walnut salad recipe. It's healthy, crisp, crunchy, creamy and full of fall flavors. The tangy dressing is perfect with the sweet apples.

We all pile out of the car in the slanted, late autumn afternoon with buckets in hand. “Whoever fills their bucket first wins!” I tell the kids as they scramble across the grass grabbing handfuls of fallen walnuts. 

Every fall I get a text from a stranger to tell me her lawn is covered in walnuts, and I can take as many as I want. Take them all, in fact, and she’ll be the happiest woman on the block. Stale, rancid, old walnuts from the grocery store shelves don’t come close to resembling the flavor of fresh walnuts from a stranger’s yard. I kind of liked walnuts before, but I loved them after I’d tasted them fresh.

With buckets full of walnuts we head home to let them cure so they are ready for eating. The kids love spreading them out in the sun to dry out, and everyone has to have a turn cracking them open at dinner. Now that I’ve got them, what am I going to do with them? One of my favorite ways to eat them is in my apple, goat cheese, walnut salad recipe.

Not only is it the perfect autumn salad, but it’s quick, easy, and dresses up a simple meal. Last week I shared my favorite pumpkin soup recipe to serve with something simple like a roasted chicken, fish, or pork chops. This salad is another great way to make simple fare feel fancy. 

I love the crisp, crunchy texture that reminds me of the satisfying crunch of stepping on the perfect leaf. Apples and walnuts are in season in the autumn as well, and this salad will taste its freshest and best right now. 

Sadly, our days of collecting and cracking walnuts are over. My daughter developed a severe tree nut allergy a few years ago, so we keep nuts out of the house. I do occasionally come across it in a restaurant, and if she’s not with us, I indulge and remember. I substitute with pepitas (roasted pumpkin seeds) these days.

Look around as you drive the streets. If you see a house with a glorious walnut tree in the yard, stop and ask if they would like you to help with the fall cleanup by taking some walnuts with you. I guarantee they’ll say yes.

Apples, diced


Goat Cheese

Balsamic Vinaigrette 

Toss the lettuce, apples, walnuts and goat cheese in a bowl. Drizzle with balsamic vinaigrette and serve. Done. It doesn’t get easier than that.


I use this apple corer, and this apple slicer to make it easier.  My older kids (7 to 10) can use these themselves, so they often make the salads now. This is a great nut cracker.

  1. It’s 6:30 a.m. And now I have a hankering for this salad! Lol. Healthier than Waldorf salad. I’m sorry about your daughter with the allergy. My hubby has sesame allergy so no take out Asian food, and I’m constantly reading labels. So I empathize.
